Recipe: Applesauce Cinnamon Muffins

This is my go-to muffin recipe.  It came from a college friend of mine.  Super easy and as far as muffins go...pretty nutritious as well! 

Beat together egg, oil, and milk.

Stir in applesauce and sugar.

Add the rest of the ingredients and stir until moist.

Place in a greased muffin pan.

Bake 400 degrees for 15-20 minutes.

Applesauce Cinnamon Muffins

1 egg
1/4 c oil or melted shortening or butter
1/3 c milk
3/4 c applesauce
1/2 c sugar
2 c flour (I use whole wheat)
1 T baking powder
2 t. cinnamon

Beat together egg, oil, and milk.  Stir in applesauce and sugar.  Add the rest of the ingredients and stir until moist.  Bake 400 degrees in greased muffin pan for 15-20 minutes.

  1. Yum! As soon as I get eggs, my plan is to make blueberry muffins! (We still have QUARTS of blueberries we picked last summer in the freezer.) These look simple!
